Green Bean Almondine

Simple, elegant, and tasty way to serve green beans!

Yield: 4-6 Servings

Ingredients

1/4 cup vegan butter

1/4 - 1/2 cup sliced almonds, to taste

2 tablespoons finely diced shallot

2 tablespoons minced garlic

1 pound fresh green beans, trimmed

Zest of 1 half lemon

Squeeze of fresh lemon juice

Method

In a pan (with a lid) over medium heat, melt butter. Add almonds and shallot. Saute about 2 to 3 minutes. Add garlic and saute until fragrant, about 2 to 3 minutes more.

Add in trimmed beans and toss to coat. Continue to cook and toss for about 5 minutes. Cover and turn heat to very low. Allow to cook, covered, for an additional 5 minutes to soften.
