Cauliflower Wings

Perfect for gameday! The wings are less of a true recipe, than it is a method. Adjust amounts based on how many wings you are making. Feel free to switch up the sauces and spices to your liking.

Ingredients

For the Wings:

Vegetable oil, for frying

Plant-based milk, unsweetened plain

Lemon juice

Cauliflower, cut into bite size pieces

Cornstarch

Garlic salt

Black pepper

Cayenne pepper

Sauce for coating (Buffalo, Teriyaki, Sweet chili, etc.)

Make your own Buffalo Sauce:

Melted butter, such as Earth Balance

Hot sauce, such as Frank’s Red Hot

Serve with:

Chopped green onions, celery sticks, carrot sticks, and, of course, blue cheese dressing for dipping!

Method

If you have a deep fat fryer, now is a great time to use it! Otherwise, heat a pot filled with enough oil to fully submerge your wings to 350F-375F.

In a bowl, mix together plant-based milk (oat, soy, or almond all work well) with lemon juice. For each cup of milk, use 2 tablespoons of lemon juice. Set aside for about 5 minutes to curdle and become like buttermilk.

In a separate bowl, add cornstarch. Season with garlic salt, pepper, and cayenne to taste.

Add a few pieces of cauliflower to the buttermilk mixture to coat, then dip in the cornstarch mixture, then into the hot oil. Fry for 2 to 3 minutes, until crispy and just beginning to brown.

Carefully remove from the oil and transfer to a paper towel-lined plate or tray to absorb any excess moisture.

They taste great just like this, but even better when you toss them in sauce. Add desired amount of sauce to a mixing bowl. Add hot wings to the bowl and toss to coat. Serve immediately, while still hot and crispy.
